The following four sections will tell you how you should handle your fish and custom-pack them for your guest ecotourits this summer. But, this is merely a stopgap method just for this year because we in Agzu do not yet have either a smoke house or cold storage or hand-canning plant. But learn this first stage technology well because you need this anyway for both smoking and canning next year.


  1. How to handle and transport fish once they are on your boat on the fishing ground
  2. How to store and dress the fish at the processing site in Agzu
  3. How to salt the fish, pack and store them for later pickup by each individual ecotourist who had caught them to take home as gifts
  4. What this summer's experience will mean to the Agzu Commune in planning the 2001 ecotour season
