Industry Application Example 4

Crab live stocking and improvement of the processing water for the production of boiled crabs (Hokkaido):

Stocking live crabs in tanks for processing is a standard practice in Hokkaido, involving king crab, tanner crab, hairy crab (kegani) and Hanasaki crabs.
In this business, the key to success is the combination of high density stocking and the lowest possible mortality ratio and keeping the highest possible meat weight. And, for this purpose, the control of water tempreture and airation are the commonly used practices. However, for reasons other than the mistakes made in control management, accidents do occur from time to time resulting in large scale death.
In order to prevent this, we used our ITC technology and achieved a remarkable result. The live stocking intensity doubled and the weakened crabs were revitalized while the death ratio and the weight loss were remarkably reduced. In addition, those in the business of daily shipping boiled crabs to the large outlets in urban centers benefitted from better coloration, superior flavor and longer shelf life of their products by using water treated with our ITC.

TLSL Comments:

(1) These crabs begin shedding their legs with eventual death when the oxygen level in the live tanks dorps to 3 ppm or less. But, when ITC-treated water is used, they continue to thrive in the tanks even at the unthinkable low oxygen level of 2 ppm.

(2) Our ITC-treated water is used by many of the live fish wholesellers and the restaurants with live glass tanks in large cities, especially Tokyo.

(3) This method practiced by them can be more widely used in the distribution of all other live fish and shell fish.

OIARI Comments:

As in the Example 2 and 3, this technology can and should be used in the domestic market in China in addition to the products for export.
