The
case of a small bakery which has grown into a major business by using
our technology (Chiba Prefecture and Tokyo):
In this case, our ITA
technology was used in treating the water for making the basic dough
for the production of a variety of baked items with higher quality,
much longer shelf life. In addition to the cost savings by the reduced
use of yeast, it resulted in the popular recognition as wholesome and
healthy food among the consuming public.
TLSL Comments:
(1) No additives have been in
use at all. It is known that these bakery products can stay away from
molding more than two weeks under the normal room tempreture, but there
has been no leftover inventories at all to prove it. Some ten years
ago, this bakery started with just one shop, and now has developed into
a chain of 57 shops with some major companies among its regular
customers for luch orders.
(2) This application can
certainly repeat itself by a variety of fancy cake shops, both large
and small.
OIARI Comments:
The fact that the everyday
bakery products can last for more than a few weeks makes it possible in
a big country like China to revolutionize the existing food
distribution system.
